What started out as a quaint idea for a cocktail bar, flourished into a gin and cocktail bar with an impressive selection of over 365 gins including 315 Australian gins, making The Botanist the largest gin bar in NSW.

The Botanist name is a nod to Sir Joseph Banks an English naturalist, botanist and patron of the natural sciences. He took part in Captain Cook’s first great voyage which included a trip to Australia. Banks is credited with introducing the eucalyptus, acacia and the genus named after him, Banksia, to the Western world. Around 80 species of plants bear his name.
